Eat Joyfully: Try These Recipes For Spring

It’s spring time.. That means all the good stuff is ready to eat. Fresh veggies and other items. And that means you can eat joyfully: try these recipes for spring. We’re sure you’ll find something that suits your fancy.  This is pkac We’ll include the ingredients for these. Click the link for the directions.

Lemony Asparagus Risotto

  • One bunch of asparagus
  • One large leek, diced (can substitute white onion)
  • Four tablespoons olive oil, divided
  • Four cloves of roughly chopped garlic
  • One cup of Arborio rice
  • One quarter cup of white wine (this is optional)
  • Three and a half or four cups of hot veggie broth (or use hot water with two teaspoons of veggie bouillon)
  • Half a cup of basil leaves (you can sub part Parsley)
  • One lemon, zest and some juice to taste
  • Half a teaspoon of salt or more to taste
  • One quarter teaspoon of pepper
  • Garnish with lemon zest, basil ribbons, pecorino cheese, optional toasted pinenuts (or other nuts or seeds), chili flakes, and maybe a drizzle of leek or olive oil.

Spring Pea Pesto

  • Two cups of peas
  • One half cup packed of mixed herbs mint, tarragon or dill
  • One zest of one lemon
  • Two and a half tablespoons lemon juice
  • One tablespoon of minced chives or green onion
  • Half of a teaspoon of salt
  • Half of a teaspoon of black pepper
  • One eighth of a cup olive oil

Simple Celery Soup

  • Two tablespoons of olive oil or butter
  • One onion, diced
  • Four fat garlic cloves, rough chopped
  • Six cups of thinly sliced celery, and one  extra-large head (save some leaves for garnish)
  • Two cups of potatoes, sliced into half-inch thick rounds
  • Four cups veggie or chicken broth
  • One cup water
  • One bay leaf (optional, remove before blending)
  • One teaspoon of salt
  • Half of a teaspoon pepper
  • One eighth to one quarter teaspoon cayenne (optional, to taste)
  • One quarter cup of fresh dill (small stems are ok)
  • Half of a cup of fresh parsley (small stems ok)
  • Half of a cup (or more) of sour cream
  • Garnish with crispy celery leaves, nigella seeds, hemp seeds (all optional)
