Serve Up These Sheet Pan Fajitas

Chicken Fajitas

If you’re looking for a quick weeknight recipe that’s as easy as it is delicious, try these sheet pan fajitas! The chicken comes out juicy. The veggies are crisp-tender. And, most importantly, cleanup is a breeze.

What You’ll Need:

  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 1/4 teaspoon salt
  • 1 1/4 teaspoon pepper
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into thin strips
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 orange bell pepper, cut into strips
  • 1 red onion, cut into wedges
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro leaves
  • 2 tablespoons freshly squeezed lime juice
  • 6 (8-inch) tortillas (flour or corn)

How to Prepare:

Preheat the oven to 425 F. Spray a rimmed baking sheet with non-stick cooking spray. (Pro tip: To make cleanup even easier, line your baking sheet with foil first.)

In a small bowl, combine the chili powder, cumin, oregano, paprika, salt, and pepper. Drizzle the chicken and vegetables with olive oil and sprinkle them with the seasoning mix. Toss to coat. (This can be done directly on the sheet pan to avoid dirtying another bowl.)

Bake for 25 minutes or until the chicken is completely cooked through and the vegetables are crisp-tender. Squeeze the lime juice over the chicken and veggies, and sprinkle everything with cilantro.

Warm the tortillas according to the package directions. Fill them with meat and veggies, and add the toppings of your choice. Enjoy!

Serving Suggestions:

For fajita toppings, you might enjoy salsa, pico de gallo, guacamole, shredded cheese, sour cream, and/or jalapenos. Though most people prefer to eat fajita chicken in a tortilla, the meat and veggies are also great all by themselves. Just add a side of chips and salsa or queso, and you have a complete meal.

You can also enjoy the chicken and veggies on top of Mexican rice. If you’re watching your carbs (or just want some extra veggies), cauliflower rice works great as well. For a fun fajita salad, place the chicken and veggies on a bed of lettuce, top with crumbled tortilla chips, and drizzle with a lime vinaigrette.
